Ingredients

Chicken

  • 2 pounds boneless skinless chicken breasts

Sauce

  • 1 tablespoon olive oil
  • 1 cup mild salsa verde Herdez recommended
  • ½ cup honey
  • ½ cup lime juice freshly squeezed is best
  • 1 ½ teaspoons chili powder
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 ½ teaspoons salt
  • ½ teaspoon smoked paprika
  • ½ teaspoon cumin
  • ¼ teaspoon black pepper

Beans

  • 15 oz. black beans rinsed and drained

Tortillas

  • 12 small flour or corn tortillas

Optional Toppings

  • diced avocado for serving
  • chopped cilantro for serving
  • lime wedges for serving
  • crumbled cheese for serving

Instructions

  • Step 1: Prepare the Chicken. Pat the chicken breasts dry, cut into smaller pieces, and sauté in olive oil with seasonings until browned and fully cooked (6-8 minutes).
  • Step 2: Create the Flavorful Sauce. Stir in salsa verde, honey, and lime juice into the cooked chicken and let it cook for another 3-5 minutes until the sauce thickens.
  • Step 3: Add the Black Beans. Gently fold in the rinsed and drained black beans.
  • Step 4: Assemble the Taco Cups. Preheat oven to 375°F (190°C). Press tortillas into a greased muffin tin and fill with the chicken and bean mixture.
  • Step 5: Bake. Bake for 15-20 minutes until tortillas are crispy and the mixture is heated through.
  • Step 6: Serve with Toppings. Remove taco cups from the muffin tin and serve warm with toppings.
