Ingredients

For the Waffles:

  • 2 cups all-purpose flour
  • 2 tablespoons brown sugar
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 3/4 cups milk
  • 1/4 cup vegetable oil
  • 1 tablespoon vanilla extract
  • 1/4 cup molasses

For the Whipped Cream:

  • 1 cup heavy cream
  • 2 tablespoons powdered sugar

Instructions

Prepare the Batter

  • In a large mixing bowl, whisk together the all-purpose flour, brown sugar, ground ginger, ground cinnamon, ground nutmeg, baking powder, baking soda, and salt for even flavor and rise.
  • In a separate bowl, beat the eggs lightly. Add the milk, vegetable oil, vanilla extract, and molasses, whisking until smooth and fully combined.
  • Pour the wet ingredients into the dry ingredients. Gently fold with a spatula until just combined; a few lumps are fine to keep waffles tender.

Cook the Waffles

  • Preheat your waffle iron fully. Lightly oil or spray if needed to prevent sticking.
  • Pour batter onto the waffle iron surface without overflowing. Close lid and cook for 4 to 6 minutes until waffles are golden brown and crisp. Repeat with remaining batter.

Make the Whipped Cream

  • Pour heavy cream into a chilled bowl. Using an electric mixer, beat on medium-high speed. When thickening, add powdered sugar and continue until soft peaks form. Avoid overbeating.

Serve

  • Stack warm gingerbread waffles, top with a generous dollop of whipped cream, and garnish with a pinch of cinnamon or extra ground ginger if desired. Serve immediately.

Equipment

  • Waffle Iron
  • Mixing Bowls
  • Whisk
  • Electric hand mixer or stand mixer
  • Measuring cups and spoons
  • Spatula

Notes

  • Use unsulfured molasses for best flavor and color.
  • Whole milk is preferred, but almond or oat milk can be substituted for dairy-free versions.
  • Chill your bowl and beaters before whipping cream for faster, more stable whipped cream.
  • Store leftover waffles in an airtight container at room temperature up to 24 hours or freeze for longer storage.
  • Add mix-ins like chopped crystallized ginger, chocolate chips, or nuts for extra texture and flavor.
