  • 4 cups fresh peaches peeled and diced
  • 1 cup granulated sugar
  • 2 tablespoons lemon juice

  • 1/4 teaspoon salt

Instructions

  • Start by peeling and dicing fresh peaches. To peel easily, blanch the peaches in boiling water for about 30 seconds, then transfer them to an ice bath. The skins should slip off effortlessly. Dice the peeled peaches into roughly 1/2-inch pieces for a perfect texture.
  • In a large bowl, combine the granulated sugar, cinnamon, nutmeg, salt, and cornstarch. Stir well to evenly distribute the spices and thickener.
  • Add the diced peaches to a separate bowl and pour the lemon juice over them. Gently toss to coat and prevent browning.
  • In a medium saucepan over medium heat, combine the peaches with the sugar and spice mixture. Cook, stirring frequently, until the mixture thickens and becomes glossy—about 5 to 7 minutes. Remove from heat and let cool for 10 minutes.
  • Spoon the peach filling into silicone ice cube trays or small freezer-safe containers, filling each compartment evenly. Freeze for at least 4 hours or until solid. Once frozen, pop the cubes out and store them in a labeled freezer bag or airtight container.
