Ingredients

For the Fruit Filling:

  • 2 cups fresh cranberries
  • 2 cups peeled and sliced apples firm variety like Granny Smith or Fuji
  • 1 cup granulated sugar
  • 1 teaspoon ground cinnamon

For the Crisp Topping:

  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 3/4 cup brown sugar packed
  • 1/2 cup unsalted butter softened
  • 1/2 teaspoon salt

Instructions

Prepare the Fruit Filling

  • In a large bowl, combine the fresh cranberries and peeled, sliced apples. Add the granulated sugar and ground cinnamon. Toss everything gently to coat the fruit evenly.

Make the Crisp Topping

  • In a separate bowl, stir together the rolled oats, all-purpose flour, brown sugar, and salt. Add the softened unsalted butter and use your fingers or a fork to work it into the dry ingredients until the mixture resembles coarse crumbs.

Assemble the Crisp

  • Spread the fruit filling evenly in your baking dish. Sprinkle the oat topping evenly over the fruit, covering it completely.

Bake to Perfection

  • Place the baking dish in a preheated oven at 350°F (175°C). Bake for 40-45 minutes, or until the topping is golden brown and the fruit filling is bubbling around the edges.

Cool and Serve

  • Allow the crisp to cool for at least 10 minutes before serving. Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream if desired.

Equipment

  • Baking dish (8x8 inch or similar)
  • Mixing Bowls
  • Measuring cups and spoons
  • Peeler and knife
  • Spatula or wooden spoon
  • Oven mitts

Notes

  • Use frozen cranberries if fresh aren’t available; thaw and drain before use.
  • Swap apples with pears or peaches for a different fruity twist.
  • For a gluten-free option, substitute oats with certified gluten-free oats and flour with almond flour.
  • Make the topping vegan by using coconut oil or plant-based margarine instead of butter.
  • Let the crisp rest after baking to allow the filling to thicken for easier serving.
