Ingredients

Fruits

  • 1 cup Pineapple chunks
  • 1 cup Mango chunks
  • 1 large Ripe mango, peeled and diced
  • 1 cup Strawberries, halved or quartered
  • 1 cup Kiwi, sliced

Coconut Chips

  • cup Roasted coconut chips or coconut flakes

Dressing

  • ½ cup Coconut-flavored beverage Such as coconut milk or a non-alcoholic alternative
  • 1 tablespoon Lime juice
  • 1 teaspoon Poppy seeds

Instructions

  • Step 1: Prepare the Fruits. Start by washing your fruits thoroughly. Halve or quarter the strawberries, slice the kiwi, and peel and dice the mango. Collect your pineapple chunks and ensure that the fruit is well-prepared for a colorful combination.
  • Step 2: Combine the Fruit. In a large mixing bowl, gently add the pineapple chunks, diced mango, halved strawberries, and sliced kiwi. The vibrant colors of the fruits should already start to create a beautiful medley in the bowl.
  • Step 3: Mix the Dressing. In a separate small bowl, whisk together the coconut-flavored beverage, lime juice, and poppy seeds. This mixture will serve as the dressing for your fruit salad, adding a delightful flavor to each bite.
  • Step 4: Assemble the Salad. Pour the dressing over the fruit mixture in the large bowl. Gently toss the fruits with the dressing so that everything is beautifully coated without squishing the fruits.
  • Step 5: Add the Finishing Touches. Sprinkle the roasted coconut chips or coconut flakes over the top of the salad. This adds both texture and a sweet, toasty flavor that pairs perfectly with the fresh fruits.
  • Step 6: Chill and Serve. Let the salad sit in the refrigerator for about 30 minutes to allow the flavors to meld together. Serve chilled as a refreshing treat on a warm day!

Notes

Use ripe fruits for the best flavor. Adjust lime juice quantity based on taste preferences. For a non-boozy version, replace coconut-flavored beverage with coconut water and skip the alcohol.
