Ingredients

Goat Cheese Mayo

  • ½ cup Mayonnaise
  • 4 ounces Goat cheese, softened

Bruschetta Toppings

  • 3 medium Roma tomatoes, diced
  • 1 cup Lettuce, finely chopped
  • 8 slices Bacon, cooked and crumbled
  • ¼ cup Olive oil
  • 1 loaf French bread, cut into ¾-inch slices
  • 1 clove Garlic, halved

Salt and Pepper

  • Salt to taste
  • Pepper to taste

Instructions

  • In a mixing bowl, combine the mayonnaise and softened goat cheese. Blend until smooth and creamy, adding salt and pepper to taste.
  • Cook the bacon until crispy, either in a skillet or in the oven at 400°F for 15-20 minutes. Crumble the cooked bacon.
  • Dice the roma tomatoes and finely chop the lettuce, removing seeds if necessary.
  • Preheat the oven to 375°F. Brush the French bread slices with olive oil and toast for 8-10 minutes until golden and crispy.
  • Rub the halved garlic clove over the warm toasted bread for added flavor.
  • Spread a layer of goat cheese mayo on each slice of toasted bread. Top with lettuce, crumbled bacon, and diced tomatoes. Drizzle with olive oil and sprinkle with salt and pepper.
  • Serve immediately on a platter and enjoy!
