Ingredients

  • 3 cups all-purpose flour or gluten-free flour
  • 1.5 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp fine sea salt
  • 2 tsp ground cinnamon
  • 3 large eggs room temperature
  • 1 cup extra light olive oil or canola or vegetable oil
  • 1.5 cups granulated sugar
  • 1 Tbsp vanilla extract
  • 3 cups grated zucchini (from 1 lb or 2 medium zucchinis)
  • 1 cup chopped walnuts or pecans optional

Instructions

  • Step 1: Preheat the Oven. Begin by preheating your oven to 350°F (175°C). This ensures that your bread will rise properly and bake evenly.
  • Step 2: Prepare the Zucchini. Grate the zucchini using a box grater or food processor. Make sure to squeeze out any excess moisture with a clean kitchen towel or cheesecloth.
  • Step 3: Mix the Dry Ingredients. In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  • Step 4: Blend the Wet Ingredients. In another bowl, beat the eggs, then add the oil, sugar, and vanilla extract. Mix until smooth.
  • Step 5: Combine Wet and Dry Ingredients. Gradually add the dry mixture into the wet mixture, stirring gently until just combined.
  • Step 6: Fold in the Zucchini and Nuts. Gently fold in the grated zucchini and nuts.
  • Step 7: Pour the Batter into Loaf Pans. Divide the batter evenly between two greased loaf pans.
