Ingredients

Dry Ingredients

  • 2 cups bread flour Provides strength and structure to the bread.
  • 3 cups whole-wheat flour Adds a nutty flavor and is packed with nutrients.
  • 0.5 cup wheat germ Boosts the fiber content and adds a lovely texture.
  • 4 teaspoons table salt Essential for flavor and controlling yeast activity.

Wet Ingredients

  • 1 cup warm water (100-110 degrees F) Activates the yeast and hydrates the flour.
  • 2 tablespoons instant or rapid-rise yeast A second dose ensures a reliable rise.
  • 2 cups whole milk Enriches the dough and contributes to its softness.
  • 0.5 cup honey Natural sweetener that helps with browning and flavor.
  • 6 tablespoons unsalted butter softened, adds richness and a tender crumb.
  • 2 tablespoons vegetable oil Helps keep the bread moist.

Instructions

  • Step 1: Prepare the Yeast Mixture - In a small bowl, combine the warm water and 0.5 teaspoon of instant yeast. Let it sit for about 5 minutes until it becomes frothy.
  • Step 2: Combine the Dry Ingredients - In a large mixing bowl, whisk together the whole wheat flour, bread flour, wheat germ, and salt.
  • Step 3: Mix in the Wet Ingredients - Pour in the yeast mixture, warm milk, honey, softened butter, and vegetable oil into the dry ingredients. Mix until a rough dough forms.
  • Step 4: Knead the Dough - Turn the dough out onto a floured surface and knead for about 8-10 minutes until smooth and elastic.
  • Step 5: First Rise - Shape the dough into a ball and place it in a greased bowl. Cover with a kitchen towel and let it rise in a warm area for about 1 hour.
  • Step 6: Shape the Loaf - Once the dough has risen, punch it down to release the air. Shape it into a loaf and place in a greased loaf pan.
  • Step 7: Second Rise - Cover the loaf pan with the kitchen towel again and let it rise for another 30-45 minutes.
  • Step 8: Preheat and Bake - Preheat your oven to 350°F (175°C) and bake the loaf for 30-35 minutes.
  • Step 9: Cool and Slice - Remove the bread from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack.
