Ingredients

  • 4 cups watermelon cut into thick “steak” cubes (about 1-inch thick)
  • 8 oz feta cheese cut into cubes similar in size to watermelon
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic glaze or balsamic reduction
  • fresh mint leaves for garnish
  • fresh basil leaves for garnish
  • salt and freshly ground black pepper to taste
  • wooden or metal skewers (if using wooden, soak in water for 30 minutes before grilling)

Instructions

Step 1: Prepare the Watermelon “Steaks”

  • Start by cutting your watermelon into thick cubes about 1 inch thick. Pat them dry with paper towels to remove excess moisture, helping achieve better grill marks and preventing sticking.

Step 2: Season and Oil

  • Lightly brush the watermelon cubes with olive oil to prevent sticking and add richness. Sprinkle salt and freshly ground black pepper on each cube to enhance sweetness.

Step 3: Grill the Watermelon

  • Preheat your grill or grill pan to medium-high heat. Grill watermelon cubes for 2-3 minutes per side until grill marks appear, keeping the watermelon warm with a slight smoky flavor but not mushy.

Step 4: Assemble the Skewers

  • Thread skewers alternating between watermelon cubes and feta cubes. Add fresh mint or basil leaves between some cubes for herbal notes and color.

Step 5: Drizzle and Serve

  • Arrange skewers on a platter. Drizzle with balsamic glaze and garnish with extra mint and basil leaves. Serve immediately and enjoy.
