Ingredients

  • 2 cups diced watermelon seedless or seeds removed
  • 1 cup diced peaches ripe but firm
  • 1 small red onion finely chopped
  • 1 jalapeño pepper seeded and minced (adjust based on heat preference)
  • 1/4 cup chopped fresh cilantro
  • 1 lime juice juice of 1 lime
  • 1/4 teaspoon salt to taste, start with and adjust

Instructions

Step 1: Prepare the Fruits and Vegetables

  • Dice 2 cups of watermelon and 1 cup of peaches into small, bite-sized pieces. Finely chop the small red onion and mince the jalapeño after removing seeds to control heat level.

Step 2: Combine Ingredients

  • In a medium bowl, gently toss together the diced watermelon, peaches, chopped red onion, and minced jalapeño. Add the 1/4 cup of chopped fresh cilantro.

Step 3: Add Lime Juice and Salt

  • Squeeze the juice of 1 lime over the salsa and sprinkle salt to taste. Start with a small amount of salt and adjust after tasting.

Step 4: Chill and Serve

  • Let the salsa rest in the refrigerator for at least 20 minutes before serving to allow flavors to meld. Serve chilled with tortilla chips, grilled meats, or as a topping for tacos or salads.
