Instructions
Step 1: Prepare the Watermelon - Cut the watermelon in half and scoop out about 8 cups of cubed flesh. Place the cubes into a blender.
Step 2: Puree the Watermelon - Blend the watermelon cubes on high speed until smooth, about 1-2 minutes.
Step 3: Strain the Puree - Strain the watermelon puree using a fine-mesh sieve or cheesecloth over a bowl to extract juice.
Step 4: Mix Ingredients - In a large pitcher, combine the strained watermelon juice with simple syrup and fresh lime juice. Stir well.
Step 5: Chill and Serve - Refrigerate for at least one hour. Serve over ice with lime slices and fresh mint if desired.
