Ingredients

  • 1 small seedless watermelon cut into bite-sized cubes
  • 8 oz fresh mozzarella balls also called bocconcini or ciliegine, drained
  • fresh basil leaves
  • balsamic glaze store-bought or homemade
  • salt and freshly ground black pepper to taste

Instructions

  • Cut the seedless watermelon into neat, bite-sized cubes about 1 to 1.5 inches in size. Place the cubes on a paper towel-lined tray for a few minutes to drain excess juice.
  • Drain the fresh mozzarella balls well. If large, cut them in half or thirds to match the size of the watermelon cubes.
  • Take one watermelon cube and place a fresh basil leaf on top. Then add a mozzarella ball or piece on top of the basil. Use toothpicks or small skewers to hold the bites together.
  • Arrange the assembled bites on a serving platter. Lightly sprinkle salt and freshly ground black pepper over the top. Drizzle balsamic glaze generously over the bites just before serving.
  • Serve immediately for the best texture and flavor. Enjoy as a refreshing appetizer for any summer gathering.
