  • 1 pound boneless, skinless chicken breasts (about 3 whole breasts)
  • 1 tablespoon olive oil
  • 1 cup diced onion (about 1 large onion)
  • 1 cup diced carrot (about 1 large carrot)
  • 1 cup diced celery (about 1 large celery rib)
  • 1 can crushed tomatoes with basil, oregano, and garlic (14.5-ounce)
  • ½ cup grated Parmesan cheese
  • 1 tablespoon chopped fresh basil
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper

Instructions

Cooking Instructions:

  • Step 1: Prepare the Chicken - Begin by patting the chicken breasts dry with paper towels. Season both sides with salt and pepper.
  • Step 2: Sauté the Vegetables - In a large skillet, heat the olive oil over medium heat. Add the diced onion, carrot, and celery. Sauté for about 5-7 minutes until softened.
  • Step 3: Brown the Chicken - Push the vegetables to the side and add the chicken. Cook for 4-5 minutes on each side until golden brown.
  • Step 4: Add the Tomatoes - Pour in the crushed tomatoes, stirring to combine. Bring to a gentle simmer.
  • Step 5: Simmer and Cook - Cover and simmer for about 15-20 minutes until the chicken reaches 165°F (75°C).
  • Step 6: Finish with Cheese and Basil - Sprinkle Parmesan cheese and fresh basil over the chicken. Cook for an additional 2-3 minutes until cheese is melted.
