Ingredients

  • 3 tablespoons whole milk
  • 3 tablespoons water
  • 3 tablespoons all-purpose flour
  • 2 1/2 cups all-purpose flour
  • 2 tablespoons dry milk powder
  • 1 tablespoon instant yeast
  • 1/4 cup sugar
  • 1 teaspoon salt
  • 1/2 cup whole milk
  • 1 large egg
  • 1/4 cup unsalted butter melted

Instructions

Step 1: Prepare the Dough

  • In a small saucepan, combine the 3 tablespoons of whole milk and 3 tablespoons of water. Heat the mixture over low heat until it's warm but not hot. Pour this mixture into a mixing bowl, and whisk in 3 tablespoons of all-purpose flour until smooth. This forms a roux that will help achieve that fluffy texture in your rolls.

Step 2: Mix Dry Ingredients

  • In another bowl, combine 2 1/2 cups of all-purpose flour, 2 tablespoons of dry milk powder, 1 tablespoon of instant yeast, 1/4 cup of sugar, and 1 teaspoon of salt. Mix these dry ingredients well to ensure even distribution.

Step 3: Combine Wet Ingredients

  • In a separate bowl, whisk together 1/2 cup of whole milk, 1 large egg, and 1/4 cup of melted unsalted butter. Once combined, add the roux from Step 1 to this mixture.

Step 4: Form the Dough

  • Slowly add the dry ingredients to the wet mixture, stirring until a dough begins to form. If using a stand mixer, knead on medium speed for about 5-7 minutes until the dough is smooth and elastic. If kneading by hand, turn the dough out onto a floured surface and knead for about 10 minutes.

Step 5: First Rise

  • Shape the dough into a ball and place it in a lightly greased bowl. Cover with a clean kitchen towel and let it rise in a warm place until doubled in size, about 1 hour.

Step 6: Shape the Rolls

  • Once the dough has risen, punch it down to release the air. Divide the dough into equal portions (about 12-15 pieces). Shape each piece into a ball and place them in a greased baking sheet close together.

Step 7: Second Rise

  • Cover the shaped rolls with the kitchen towel again and let them rise for another 30-45 minutes until they have puffed up.

Step 8: Preheat and Bake

  • Preheat your oven to 375°F (190°C). Bake the rolls for 15-20 minutes, or until golden brown on top.
