  • Step 2: Prepare the Tomatoes and Garlic - Toss the ripe mixed cherry tomatoes with the finely sliced garlic, thyme, salt, and pepper on a baking sheet, drizzled with olive oil.
  • Step 3: Roast - Place the baking sheet in the preheated oven and roast for about 20-25 minutes, or until the tomatoes are blistered.
  • Step 4: Whip the Feta - In a mixing bowl, combine the crumbly feta and full-fat cream cheese and whip until smooth and creamy.
  • Step 5: Add Flavor - Fold in the roasted tomatoes and garlic into the whipped feta along with lemon zest.
  • Step 6: Adjust Seasoning - Taste and adjust seasoning with more salt, pepper, or balsamic vinegar if desired.
