Ingredients

  • 2 steaks ribeye any thickness, bone-in or boneless
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 tablespoon unsalted butter cut into 2 pieces

Instructions

  • Start by removing the ribeye steaks from the refrigerator. Allow them to come to room temperature for about 30 minutes.
  • Pat the steaks dry with paper towels. Rub each steak with olive oil and season both sides with salt and pepper.
  • Preheat the cast-iron skillet over medium-high heat for about 5 minutes.
  • Place the seasoned steaks in the hot skillet and sear for 4-5 minutes.
  • Flip the steaks, add butter to the skillet, and baste as it melts. Cook for another 4-5 minutes.
  • Check the internal temperature with an instant-read thermometer. Aim for 130°F (54°C) for medium-rare.
  • Remove the steaks from the skillet and let them rest for at least 5-10 minutes.
  • Slice the steaks against the grain and serve with your favorite sides.
