  • 3 tablespoons hulled tahini
  • 2 tablespoons extra virgin olive oil

  • Step 1: Prepare the Chickpeas - Start by draining and rinsing the canned chickpeas. In a medium saucepan, combine the chickpeas and baking soda with enough water to cover them. Bring to a boil over medium heat and let simmer for about 20 minutes until the chickpeas are very soft.
  • Step 2: Drain and Cool - After simmering, drain the chickpeas and let them cool slightly to prevent the hummus from becoming too warm during blending.
  • Step 3: Blend the Ingredients - In your food processor, combine the softened chickpeas, lemon juice, minced garlic, salt, and tahini. Blend until smooth, scraping down the sides as needed.
  • Step 4: Add Olive Oil - While the food processor is running, slowly drizzle in the extra virgin olive oil. Adjust consistency with water if needed.
  • Step 5: Taste and Adjust - Taste the hummus and adjust seasoning with more lemon juice or garlic as desired.
  • Step 6: Serve and Enjoy - Transfer to a serving bowl, drizzle with olive oil, and enjoy with pita, veggies, or as a sandwich spread.
