  • 3/4 cup cold unsalted butter cut into pieces
  • 1 large egg + 1 teaspoon water (for brushing)

For the Filling:

  • 6 large eggs
  • 2 cloves garlic minced
  • 1 1/2 cups heavy cream
  • 3/4 cup white cheddar cheese freshly grated
  • 1/4 cup Gruyere cheese freshly grated
  • 1/2 teaspoon cracked black pepper
  • 1 pinch salt
  • 1 pinch crushed red pepper flakes
  • 1 1/4 cups broccoli florets chopped

  • Step 1: Make the Crust - Combine flour, sugar, and salt in a bowl. Add butter and mix until coarse crumbs form. Whisk egg, vinegar, and water; add to flour mixture, stirring until dough forms. Wrap and refrigerate for 30 minutes.
  • Step 2: Prepare the Filling - Sauté garlic until fragrant. Add broccoli, cooking until tender. Whisk together eggs, cream, pepper, salt, and red pepper flakes; fold in broccoli and cheeses.
  • Step 3: Blind Bake the Crust - Preheat oven to 375°F. Roll out dough; transfer to pie dish. Blind bake with weights for 15 minutes, then without for 10 minutes until golden.
  • Step 4: Assemble the Quiche - Pour filling into crust. Brush edges with egg wash.
  • Step 5: Bake the Quiche - Bake for 30-35 minutes until filling is set. Cool slightly before slicing.
