  • Step 1: Prepare the Marinade - In a large mixing bowl, combine the plain yogurt, minced garlic, minced ginger, olive oil, ground garam masala, chili powder, ground turmeric, kosher salt, and lemon juice. Use a whisk or spoon to mix everything together until you achieve a smooth, homogenous marinade.
  • Step 2: Marinate the Chicken - Add the boneless, skinless chicken breasts into the bowl with the marinade. Ensure each piece is thoroughly coated with the marinade. For best results, cover the bowl with plastic wrap or transfer the chicken to an airtight container and refrigerate for at least 1 hour, though overnight is recommended for maximum flavor.
  • Step 3: Preheat Your Cooking Surface - If grilling, preheat your grill to medium-high heat. If baking, preheat your oven to 425°F (220°C). This ensures that the chicken cooks evenly and develops a nice char or crust.
  • Step 4: Cook the Chicken - Remove the chicken from the marinade, allowing any excess marinade to drip off. Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). If baking, place the chicken on a baking sheet and cook for approximately 20-25 minutes, flipping halfway through.
