Ingredients

For the Chex Mix:

  • 1 cup crisp honey square cereal such as Honey Nut Chex for sweetness
  • 1 cup crisp wheat cereal Wheat Chex for crunch
  • ½ cup mini pretzel twists for salty contrast
  • ½ cup unsalted cashews for rich flavor
  • ½ cup pecan halves for chewy texture
  • ½ cup whole almonds for crunch
  • ½ cup unsalted peanuts adds nuttiness
  • 1 large egg white or 3 tablespoons of liquid egg whites
  • 2 tablespoons pure maple syrup for sweetness
  • 2 teaspoons ground cinnamon for warmth
  • 1 teaspoon ground chipotle chili powder for smoky kick
  • 1 teaspoon ground chili powder for heat
  • ½ teaspoon kosher salt to balance flavors
  • ½ teaspoon ground cumin for earthiness
  • ½ teaspoon ground cayenne pepper to amp spiciness

Instructions:

  • Preheat your oven to 300°F (150°C).
  • Line a large baking sheet with parchment paper.
  • In a large mixing bowl, combine the honey square cereal, wheat cereal, mini pretzel twists, cashews, pecans, almonds, and peanuts. Stir gently.
  • In a separate bowl, whisk together the egg white, maple syrup, cinnamon, chipotle chili powder, chili powder, salt, cumin, and cayenne pepper.
  • Pour the sweet and spicy mixture over the dry ingredients and mix thoroughly.
  • Transfer the coated mix to the prepared baking sheet, spreading it out evenly.
  • Bake for 20-25 minutes, stirring every 10 minutes.
  • Remove from oven, let cool completely, and break apart clumps before enjoying.
