Ingredients

  • 1 pound chicken breast diced
  • 1 tablespoon olive oil
  • 2 cups gnocchi store-bought or homemade
  • 1 cup sun-dried tomatoes chopped
  • 2 cups fresh spinach
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon Italian seasoning
  • salt and pepper to taste
  • 0.5 cup grated Parmesan cheese
  • fresh basil leaves for garnish

Instructions

  • Heat the olive oil in a large skillet over medium-high heat. Season diced chicken breast with salt, pepper, garlic powder, onion powder, and Italian seasoning. Cook chicken until golden brown and cooked through, about 5-7 minutes. Remove chicken and set aside.
  • Add gnocchi to the same skillet and cook for 2-3 minutes on each side until lightly golden and crispy.
  • Add chopped sun-dried tomatoes and pour in chicken broth. Scrape bottom of skillet to lift browned bits. Stir and simmer for 3-4 minutes until broth reduces slightly.
  • Toss in fresh spinach and cooked chicken. Stir until spinach wilts and everything is heated through, about 2 minutes.
  • Turn off heat. Sprinkle grated Parmesan cheese over skillet and mix gently. Garnish with fresh basil leaves before serving.
