Ingredients

  • 2/3 cup whole wheat flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter (softened at room temperature or melted)
  • 1/2 cup Monkfruit Sweetener
  • 1 tablespoon vanilla extract
  • 1/2 cup rolled oats
  • 1/4 cup finely chopped pecans

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, whisk together the whole wheat flour, cocoa powder, baking soda, and salt.
  • In another bowl, beat the softened butter and Monkfruit Sweetener together until light and fluffy.
  • Mix in the vanilla extract to the butter and sweetener mixture.
  • Gradually add the dry mixture to the wet ingredients, stirring until just combined.
  • Gently fold in the rolled oats and finely chopped pecans.
  • Scoop rounded tablespoons of dough onto a lined baking sheet, spacing them about 2 inches apart.
  • Bake for 10-12 minutes until set around the edges but still soft in the center.
  • Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
