Ingredients

  • 2 heads Romaine lettuce cut or torn into bite-sized pieces
  • 1 pint strawberries sliced
  • 2 green onions sliced
  • 1 cup purple seedless grapes sliced (optional)
  • 1/2 cup walnuts or pecans (optional)
  • 1 Tbsp dry Italian dressing
  • 3 Tbsp orange juice
  • 3 Tbsp rice vinegar
  • 1/2 cup vegetable oil
  • 1/4 cup sugar

Instructions

  • Start by washing your Romaine lettuce thoroughly under cool running water. Pat it dry with a clean towel or use a salad spinner if you have one. Once dried, cut or tear the lettuce into bite-sized pieces and place them in a large mixing bowl.
  • Next, take your strawberries and slice them into thin pieces. If you choose to use grapes, slice them in half as well. Add both the strawberries and grapes to the bowl with the Romaine lettuce.
  • Slice the green onions and add them to the bowl. If you’re using walnuts or pecans, give them a rough chop and toss them in with the other ingredients for an extra crunch.
  • In a separate bowl, whisk together the dry Italian dressing, orange juice, rice vinegar, vegetable oil, and sugar until the mixture is well combined. This dressing will bring your salad to life!
  • Pour the dressing over your salad mixture. Using salad tongs, gently toss everything together until the lettuce and fruit are evenly coated in the dressing.
  • Transfer the salad to a serving platter or individual bowls. Garnish with additional walnuts or pecans if desired, and savor the delightful flavors of your Strawberry Romaine Salad!

Equipment

  • Large Mixing Bowl
  • Whisk
  • Cutting Board
  • Sharp Knife
  • Measuring spoons and cups
  • Salad tongs

Notes

  • For a creamier dressing, you can add a dollop of Greek yogurt or a splash of mayonnaise.
  • Feel free to let the salad sit for 10-15 minutes after tossing it with the dressing; this allows the flavors to meld beautifully.
  • When making this salad ahead of time, store the dressing separately to prevent the lettuce from wilting.
