Steak Nacho Mac and Cheese Bake

Ingredients

  • 8 oz elbow macaroni
  • 1 lb beef steak, cubed tender, bite-sized pieces
  • 1 tablespoon olive oil for searing
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1 cup beef broth
  • 1 cup shredded cheddar cheese classic sharpness
  • 1 cup shredded Monterey Jack cheese melts beautifully
  • 1 cup diced tomatoes with green chilies
  • 15 oz black beans, rinsed and drained 1 can
  • 1/2 cup sliced jalapeños fresh or pickled
  • 1/4 cup chopped green onions
  • salt and pepper to taste
  • 1/2 cup turkey bacon, cooked and crumbled optional
  • fresh cilantro for garnish

Instructions

Step 1: Cook the Pasta

  • Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until just al dente, usually about 7-8 minutes. Drain and set aside.

Step 2: Sear the Steak

  • Heat the olive oil in a large skillet over medium-high heat. Toss the cubed steak with garlic powder, onion powder, chili powder, salt, and pepper. Add the steak to the skillet and cook, stirring occasionally, until browned on all sides and cooked through, about 5-7 minutes. Remove from heat.

Step 3: Combine Ingredients

  • In a large mixing bowl, combine the cooked elbow macaroni, seared steak, beef broth, shredded cheddar and Monterey Jack cheeses, diced tomatoes with green chilies, black beans, jalapeños, and green onions. Stir well to combine and ensure the cheese starts melting into the warm pasta.

Step 4: Prepare to Bake

  • Preheat your oven to 350°F (175°C). Transfer the mac and cheese mixture to a greased 9x13 inch baking dish. If using turkey bacon, sprinkle the crumbled pieces evenly over the top.

Step 5: Bake

  • Bake uncovered for 20-25 minutes, or until the cheese is bubbly and the top has a slight golden crust. Remove from oven and let it rest for 5 minutes.

Step 6: Garnish and Serve

  • Sprinkle fresh cilantro over the top before serving. Enjoy this rich, flavorful dish with a side of your favorite greens or a simple salad.
