Ingredients

  • 1 lb beef steak cut into small pieces
  • 1 large onion thinly sliced

  • 1 package pierogi frozen or fresh, cheese or potato-filled

  • 1 teaspoon garlic powder adds subtle depth of flavor to the steak

  • 1 cup shredded cheese optional, cheddar or mozzarella
  • chopped fresh parsley for garnish

Instructions

  • Begin by slicing your steak into bite-sized pieces. Thinly slice the onion to ensure it cooks evenly and caramelizes well. Have your pierogi ready to go—if frozen, no need to thaw, but keep them nearby.
  • Heat 1 tablespoon of olive oil in your skillet over medium heat. Add the sliced onions with a pinch of salt and cook slowly, stirring occasionally, for about 15-20 minutes until golden brown and soft.
  • In a bowl, toss the steak pieces with garlic powder, paprika, salt, and pepper. Once the onions are caramelized, push them to the side of the skillet and add the remaining tablespoon of olive oil. Add the steak pieces in a single layer and cook over medium-high heat for 3-5 minutes until browned on all sides but still tender.
  • Nestle the pierogi into the skillet around the steak and onions. If frozen, cook for about 8-10 minutes, turning occasionally, so they crisp slightly and warm through. If fresh, 5-7 minutes will suffice.
  • Sprinkle the shredded cheese evenly over the top of the skillet. Cover the pan with a lid for a few minutes until the cheese melts and bubbles invitingly.
  • Finish by sprinkling chopped fresh parsley over the dish for a pop of color and freshness. Serve hot straight from the skillet for a cozy, rustic meal.
