Ingredients

  • 2 cups unsweetened plant milk Oatly or soy milk recommended
  • 6 pieces dates soaked for 10 minutes and pitted
  • 4-6 tbsp fresh spirulina adds color and health benefits
  • 2-3 tbsp powdered spirulina for an extra nutrient boost
  • 2 tsp cinnamon to enhance flavor
  • 3/4 cup chia seeds the star ingredient

Instructions

  • Step 1: Soak the Dates - Begin by soaking the 6 dates in warm water for about 10 minutes to soften them.
  • Step 2: Blend the Base - In a blender, combine the soaked dates and 2 cups of unsweetened plant milk. Blend until smooth.
  • Step 3: Mix in Spirulina - Add 4-6 tbsp of fresh spirulina and 2-3 tbsp of powdered spirulina along with 2 tsp of cinnamon. Blend again until well combined.
  • Step 4: Combine with Chia Seeds - In a mixing bowl, add 3/4 cup of chia seeds and pour the spirulina mixture over them. Stir thoroughly.
  • Step 5: Let it Sit - Cover and refrigerate for at least 4 hours or overnight to allow the chia seeds to absorb the liquid.
  • Step 6: Serve and Enjoy - Once set, stir the pudding and serve plain or topped with fruits, nuts, or granola.
