Ingredients

  • 2 ripe bananas mashed
  • 1 cup peaches diced (fresh or thawed if frozen)
  • 1/2 cup sugar
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt

Instructions

Step 1: Preheat and Prepare

  • Begin by preheating your oven to 350°F (175°C). Grease a 9x5-inch loaf pan with a little vegetable oil or line it with parchment paper to prevent sticking.

Step 2: Mix the Wet Ingredients

  • In a large mixing bowl, mash the ripe bananas until smooth. Add the sugar, vegetable oil, and eggs, then whisk until well combined. Stir in the vanilla extract to add a lovely depth of flavor.

Step 3: Combine the Dry Ingredients

  • In a separate bowl, sift together the all-purpose flour, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg to evenly distribute spices and leavening agents.

Step 4: Bring Wet and Dry Ingredients Together

  • Gradually add the dry ingredients to the wet mixture, folding gently with a spatula or wooden spoon. Be careful not to overmix; a few lumps are okay and will help keep the loaf tender.

Step 5: Fold in the Peaches

  • Gently fold the diced peaches into the batter, distributing them evenly without breaking them down too much for bursts of flavor and moisture.

Step 6: Bake the Loaf

  • Pour the batter into your prepared loaf pan, smoothing the top with a spatula. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Start checking at 50 minutes as ovens vary.

Step 7: Cool and Serve

  • Allow the loaf to cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely. Slice and enjoy plain, with butter, or a drizzle of honey.

Equipment

  • 9x5-inch loaf pan
  • Mixing Bowl
  • Whisk
  • Spatula
  • Sifter
  • Wire Rack

Notes

  • Avoid overmixing the batter to keep the loaf light and fluffy.
  • Use ripe bananas with brown spots for optimal sweetness and moisture.
  • Measure flour properly by spooning and leveling to prevent dryness.
  • Cool the loaf completely before slicing to avoid crumbling or gummy texture.
  • If using fresh peaches, choose ripe but firm fruit to avoid excess moisture.
