Ingredients

Chicken

  • 2 pounds boneless, skinless chicken breast cut into chunks

Sauce and Vegetables

  • 4 tablespoons cornstarch
  • 1 tablespoon vegetable oil
  • ¼ cup sweet onion chopped
  • cup Thai red sweet chili sauce
  • 2 cups pineapple about ½ pineapple, chopped
  • 2 pieces red bell peppers chopped
  • 4 pieces green onions thinly sliced

Instructions

  • Step 1: Prepare the Chicken - Start by cutting your boneless, skinless chicken breasts into bite-sized chunks.
  • Step 2: Coat the Chicken - In a large mixing bowl, combine the chicken chunks with cornstarch. Toss until each piece is well coated.
  • Step 3: Sauté the Onion - In a skillet over medium heat, add the vegetable oil. Sauté the chopped sweet onion until it becomes translucent and fragrant, about 3-4 minutes.
  • Step 4: Combine Ingredients in the Slow Cooker - In your slow cooker, add the sautéed onion, chicken, Thai red sweet chili sauce, chopped pineapple, and chopped red bell peppers. Stir to combine.
  • Step 5: Cook - Cover the slow cooker and set it to low for 6-7 hours or high for 3-4 hours.
  • Step 6: Finish with Green Onions - Once cooking is complete, stir in the thinly sliced green onions just before serving.
  • Step 7: Serve and Enjoy - Serve over rice, quinoa, or noodles to soak up the sauce.
