Ingredients

Beef

  • 2 lbs boneless beef loin seasoned with salt and pepper

Sauce

  • 1 can pineapple chunks (8-ounce, in juice)
  • 0.25 cup brown sugar
  • 0.25 cup cider vinegar
  • 0.25 cup soy sauce
  • 1 diced red bell pepper
  • 2 tablespoons water
  • 1 tablespoon cornstarch (optional)

Garnish

  • Green onion for garnish (optional)

Instructions

  • Step 1: Season the boneless beef loin with salt and pepper.
  • Step 2: In a medium-sized mixing bowl, combine the pineapple chunks (with juice), brown sugar, cider vinegar, and soy sauce. Stir until the brown sugar dissolves.
  • Step 3: Place the seasonedbeefloin in the slow cooker and pour the sauce mixture over it. Sprinkle diced red bell pepper on top.
  • Step 4: Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  • Step 5: For a thicker sauce, mix cornstarch with water to create a slurry and stir it into the slow cooker about 30 minutes before serving.
  • Step 6: Shred the beef with two forks, mix it back into the sauce, and serve hot garnished with sliced green onions.
