  • 4 medium red potatoes cubed into 1/2 inch pieces (unpeeled if preferred)
  • 3 cloves garlic minced
  • 1 tablespoon fresh rosemary chopped
  • 1/2 teaspoon black pepper
  • Kosher or sea salt to taste

Instructions

  • Start by washing the red potatoes thoroughly. If you prefer a rustic feel and added nutrition, leave the skins on. Cut the potatoes into 1/2 inch cubes to ensure even cooking.
  • In a large bowl, combine the cubed potatoes, minced garlic, chopped rosemary, black pepper, and salt. Drizzle the extra virgin olive oil over the mixture, and toss until the potatoes are evenly coated.
  • Pour the potato mixture into the slow cooker. Spread it out evenly to promote even cooking.
  • Cover the slow cooker with its lid and set it to cook on low for 6-8 hours, or on high for 3-4 hours. The longer cooking time on low will yield creamier potatoes.
  • Once the cooking time is up, gently stir the potatoes to mix in any remaining garlic and herbs. Taste and adjust seasoning if necessary before serving.
