Ingredients

  • 1 pound boneless skinless chicken breast
  • 15 ounces canned black beans drained and rinsed
  • 2 cups chunky salsa choose a brand with no added sugars
  • 8 whole wheat tortillas for serving

Instructions

  • Start by placing the boneless skinless chicken breasts at the bottom of your slow cooker.
  • Next, drain and rinse the canned black beans. Pour them over the chicken in the slow cooker.
  • Now, it’s time to add the chunky salsa. Pour it over the chicken and beans, making sure everything is evenly coated.
  • Cover the slow cooker with the lid and set it to low for 6-8 hours or high for 3-4 hours.
  • When the cooking time is up, remove the chicken breasts and shred them using two forks. Return the shredded chicken to the slow cooker and stir everything together.
  • Warm the whole wheat tortillas in a separate skillet or microwave. Serve the mixture inside the tortillas.
