Ingredients

Instructions

Prepare the Aromatics

  • Heat olive oil in a skillet over medium heat. Add the sliced onion and sauté for about 5 minutes until softened and slightly caramelized. Toss in the minced garlic and cook for an additional 1 minute, stirring constantly to avoid burning.

Assemble in the Slow Cooker

  • Place the 2 pounds of boneless, skinless chicken breasts into the slow cooker. Sprinkle with paprika, salt, and black pepper evenly on top. Add the sautéed onion and garlic mixture. Pour 1 cup of pork-free BBQ sauce over the chicken, ensuring the breasts are well coated.

Slow Cook to Perfection

  • Cover and cook on low for 6 to 7 hours, or on high for 3 to 4 hours. Chicken should be tender enough to shred easily with forks. The low and slow method gives the best texture and flavor, but if you’re short on time, the high setting works well too.

Shred the Chicken
