Start by removing the crusts from the sourdough bread. Cut each slice into bite-sized squares, roughly 1-inch pieces. This will help them soak up the egg mixture beautifully.
In a mixing bowl, combine the eggs, milk, vanilla extract, coconut sugar, and cinnamon. Whisk until the mixture is smooth and the ingredients are well incorporated.
