Ingredients

For the French Toast Bites:

  • 4 slices sourdough bread thick, crust removed
  • 2 large eggs
  • 2 tablespoons milk any type you prefer
  • 1 teaspoon vanilla extract
  • 1/3 cup coconut sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons coconut oil or butter, if preferred

Directions:

  • Start by removing the crusts from the sourdough bread. Cut each slice into bite-sized squares, roughly 1-inch pieces. This will help them soak up the egg mixture beautifully.
  • In a mixing bowl, combine the eggs, milk, vanilla extract, coconut sugar, and cinnamon. Whisk until the mixture is smooth and the ingredients are well incorporated.
  • Place the cut bread pieces in a shallow dish and pour the egg mixture over them. Gently toss the bread to ensure each piece is well-coated. Allow it to soak for about 5 minutes.
  • In a skillet or a griddle, heat the coconut oil (or butter) over medium heat until melted and hot.
  • Add the soaked bread pieces to the skillet in a single layer. Cook for about 2-3 minutes on each side, or until they are golden brown and crispy.
  • Once all the bites are cooked, transfer them to a serving plate. You can dust them with a little extra cinnamon and coconut sugar for presentation. Serve warm with your favorite toppings.
