  • 1 cup Brown sugar, packed
  • 2 large Eggs
  • 1 tablespoon Vanilla extract
  • 2.5 cups Rolled oats, finely ground Pulse in a blender or food processor until fine.
  • 2 cups All-purpose flour
  • 0.5 teaspoon Salt
  • 1 teaspoon Baking powder
  • 1 teaspoon Baking soda
  • 2 cups Semi-sweet chocolate chips
  • 1 cup Chopped walnuts (optional)

Instructions

  • Step 1: Preheat your oven to 350°F (175°C).
  • Step 2: In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
  • Step 3: Beat in the eggs one at a time, then stir in the vanilla extract.
  • Step 4: In a separate bowl, whisk together the ground oats, flour, salt, baking powder, and baking soda.
  • Step 5: Gradually mix the dry ingredients into the wet ingredients until just combined.
  • Step 6: Fold in the chocolate chips and walnuts (if using).
  • Step 7: Optionally chill the dough in the refrigerator for 30 minutes.
  • Step 8: Drop rounded balls of dough onto lined baking sheets, spacing them 2 inches apart.
  • Step 9: Bake for 10-12 minutes until edges are golden brown.
  • Step 10: Cool on baking sheets for 5 minutes before transferring to a wire rack.
