For the Roasted Beans:

  • 2 cans garbanzo beans 15.5 ounces each, rinsed and drained
  • 10 cloves garlic peeled
  • 2 large shallots thinly sliced
  • 3 small bay leaves preferably fresh
  • 1 teaspoon fennel seeds
  • 1 cup extra-virgin olive oil for roasting

For the Swiss Chard:

  • 2 tablespoons extra virgin olive oil for sautéing
  • 5 cloves garlic peeled and crushed
  • 2 medium shallots sliced thinly
  • 2 bunches Swiss chard center stems cut out and leaves coarsely torn
  • 2 cups low sodium chicken or vegetable broth for flavor

  • Preheat your oven to 400°F (200°C).
  • In a mixing bowl, combine the rinsed and drained garbanzo beans with 1 cup of extra-virgin olive oil, fennel seeds, and salt to taste. Toss until the beans are well-coated.
  • Spread the garbanzo beans evenly on a baking sheet. Add the peeled garlic cloves and bay leaves. Roast in the preheated oven for about 25-30 minutes, stirring halfway through.
  • While the beans are roasting, heat 2 tablespoons of extra virgin olive oil in a large skillet over medium heat. Add the thinly sliced shallots and crushed garlic. Sauté until the shallots are translucent, about 5 minutes.
  • Add the coarsely torn Swiss chard to the skillet, along with the low sodium broth and remaining bay leaves. Cook until the chard is wilted, about 5-7 minutes. Remove bay leaves before serving.
  • In a large serving bowl, combine the roasted garbanzo beans with the sautéed Swiss chard mixture. Toss gently and serve warm.
