Ingredients

  • ½ cup unsalted butter room temperature (1 stick)
  • 2 cloves garlic minced
  • 2 tablespoons chopped fresh cilantro
  • 2 8-ounce filet mignon steaks worth the splurge!
  • 4 teaspoons kosher salt
  • 4 teaspoons ground black pepper
  • ½ cup unsalted butter (½ stick)
  • 1 tablespoon olive oil

Instructions

  • In a mixing bowl, combine the room temperature unsalted butter, minced garlic, and chopped fresh cilantro. Mix until all ingredients are well incorporated. Set aside.
  • Pat the filet mignon steaks dry with paper towels and season both sides with kosher salt and ground black pepper.
  • Place your cast iron skillet over medium-high heat and add the olive oil. Heat until shimmering.
  • Carefully add the seasoned steaks to the hot skillet and sear without moving for about 4-5 minutes.
  • Flip the steaks and cook for an additional 4-5 minutes for medium-rare. Use a meat thermometer for accuracy.
  • Transfer the steaks to a cutting board and let them rest for about 5-10 minutes.
  • Slice the steaks against the grain and serve with a generous dollop of the cilantro steak butter.
