  • 6 cups Fresh Raspberries Ripe and sweet for best flavor.
  • ¾ cup Granulated Sugar
  • ¼ cup Water
  • ½ cup Fresh Lemon Juice About 3-4 lemons.
  • ¼ tsp Kosher Salt
  • 1 Tbsp Vodka Optional, for a softer texture.

Instructions

  • Step 1: Rinse the fresh raspberries under cold water, shake off excess water, and place them in a blender.
  • Step 2: In a small saucepan, combine the granulated sugar and water. Heat over medium-low, stirring until sugar dissolves.
  • Step 3: Once the sugar is dissolved, let it cool slightly. In the blender, add the cooled syrup, lemon juice, and salt. Blend until smooth.
  • Step 4: (Optional) Strain the mixture through a fine mesh sieve to remove seeds for a silkier texture.
  • Step 5: Transfer the mixture into a shallow container, cover, and freeze for at least 4 hours until firm.
  • Step 6: Serve the sorbet in bowls or cones, garnished with fresh raspberries or mint.
