Ingredients

  • 1/3 cup quinoa pre-rinsed to remove the natural coating that can taste bitter
  • 2/3 cup water for cooking the quinoa
  • 16 dates whole, pitted, and unsweetened for natural sweetness
  • 1/2 cup raw almonds with skin for added texture and nutrition
  • 1/3 cup natural crunchy peanut butter or substitute with almond butter or SunButter for a nut-free option
  • 1/3 cup dark chocolate chips choose a high-quality brand for the best flavor

Instructions

  • Begin by rinsing the quinoa under cold water to remove any bitterness. In a medium saucepan, combine the rinsed quinoa and 2/3 cup of water. Bring it to a boil over medium heat. Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes or until all the water is absorbed. Remove from heat and let it cool.
  • While the quinoa is cooking, take your 16 pitted dates and soak them in warm water for about 10 minutes. This softens them, making them easier to blend. After soaking, drain the dates and set them aside.
  • In a food processor, combine the cooked quinoa, soaked dates, raw almonds, and crunchy peanut butter. Blend until the mixture is smooth and well combined. You may need to scrape down the sides to ensure everything is incorporated.
  • Once the mixture is well blended, add in the dark chocolate chips and pulse a few times to incorporate them without completely breaking them down.
  • Using your hands or a small cookie scoop, form the mixture into small drops or balls and place them on a baking sheet lined with parchment paper. This step can get a bit sticky, so wetting your hands with a little water can help.
  • Refrigerate the baking sheet with the drops for at least 30 minutes to help them firm up. Once they are set, enjoy your Quinoa Chocolate Drops straight from the fridge or store them in an airtight container.
