Ingredients

  • 1 package potato gnocchi store-bought or homemade
  • 2 cups cherry tomatoes halved
  • 2 tablespoons olive oil extra virgin
  • 1 cup fresh basil leaves chopped
  • salt and pepper to taste

Instructions

  • Bring a large pot of salted water to a rolling boil. Add the potato gnocchi and cook until they float to the surface, about 2 to 3 minutes. Use a slotted spoon to transfer them to a colander to drain.
  • While the gnocchi cooks, heat the olive oil in a large skillet over medium heat. Add the halved cherry tomatoes and sauté for about 4 to 5 minutes until they soften and begin to blister slightly.
  • Add the drained gnocchi to the skillet with the tomatoes. Toss gently to coat the gnocchi in the olive oil and tomato juices. Stir in the chopped fresh basil, then season generously with salt and pepper to taste.
  • Plate the gnocchi and tomato mixture while warm. Garnish with a few whole basil leaves or a drizzle of extra olive oil if desired. Serve immediately.
