Ingredients

  • 1 pound ground chicken
  • 2 tablespoons sesame oil
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic minced
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 tablespoon sesame seeds toasted
  • 1/2 cup shredded carrots
  • 1/2 cup chopped green onions
  • 1 head butter lettuce leaves separated
  • salt and pepper to taste

Instructions

Step 1: Prep Your Ingredients

  • Finely grate the fresh ginger and mince the garlic cloves. Rinse and separate the butter lettuce leaves, patting them dry. Chop the green onions and shred the carrots if not pre-shredded.

Step 2: Cook the Ground Chicken

  • Heat the sesame oil in a large skillet over medium-high heat. Add the grated ginger and minced garlic; sauté for about 30 seconds until fragrant. Add ground chicken, breaking it apart, and cook until browned and cooked through, about 6-8 minutes. Season with salt and pepper to taste.

Step 3: Add the Sauce and Veggies

  • Stir in soy sauce, rice vinegar, and honey. Mix well to coat the chicken. Fold in shredded carrots and chopped green onions, cooking for 2 minutes until veggies soften but remain crunchy. Sprinkle sesame seeds and stir.

Step 4: Assemble the Wraps

  • Spoon warm chicken mixture into individual butter lettuce leaves. Serve immediately while hot and juicy.

Step 5: Optional Garnishes

  • Add a drizzle of extra soy sauce, a splash of sriracha, freshly chopped cilantro, crushed peanuts, or additional toasted sesame seeds to elevate the wraps.

Equipment

  • Large non-stick skillet
  • Grater or microplane
  • Sharp knife and cutting board
  • Mixing spoon or spatula
  • Measuring spoons

Notes

  • Store cooked chicken mixture in an airtight container in the fridge for up to 3 days; keep lettuce separate to maintain crispness.
  • Freeze the chicken mixture for up to 1 month; thaw overnight before reheating.
  • Substitute ground turkey or beef for chicken, and coconut aminos for soy sauce to customize the recipe.
