Ingredients

  • 1 lb boneless chicken thighs
  • 2 tbsp olive oil
  • 1 tbsp paprika
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 large bell peppers chopped into medium pieces

Instructions

  • Start by patting the boneless chicken thighs dry with paper towels.
  • In a small bowl, mix together the paprika, salt, and pepper. Rub this spice mixture all over the chicken thighs.
  • In a large skillet, heat the olive oil over medium-high heat.
  • Place the seasoned chicken thighs in the skillet, cooking them for about 5-7 minutes on each side.
  • Once the chicken is cooked, remove it from the skillet and set aside. Add the chopped bell peppers and sauté for about 3-5 minutes.
  • Return the chicken to the skillet with the bell peppers and stir everything together. Serve hot.
