Ingredients

For the Coconut Rice:

  • 2 cups uncooked jasmine rice
  • 1 can coconut milk 14-ounce full-fat
  • 1 cup coconut water
  • 1 tablespoon sugar
  • 1 teaspoon salt

Instructions

Cooking Instructions:

  • Step 1: Rinse the jasmine rice under cold water until the water runs clear, then drain well.
  • Step 2: In a medium-sized pot, combine the rinsed rice, coconut milk, coconut water, sugar, and salt. Stir to mix evenly.
  • Step 3: Place the pot over medium-high heat and bring to a gentle boil.
  • Step 4: Once boiling, reduce heat to low, cover, and let simmer for about 18-20 minutes until all liquid is absorbed.
  • Step 5: Remove from heat, keep the lid on, and let sit for an additional 5-10 minutes.
  • Step 6: Fluff the rice with a fork and serve warm.
