Ingredients

Dry Ingredients

  • 1.5 cups All-purpose flour
  • 1 cup Granulated sugar
  • 1.5 tsp Baking powder
  • 0.25 tsp Salt
  • 1 tsp Cinnamon
  • 0.5 tsp Ground nutmeg
  • 0.25 tsp Ground ginger

Wet Ingredients

  • 1 cup Pumpkin puree
  • 6 tbsp Vegetable oil
  • 2 large Eggs
  • 1 tsp Vanilla extract
  • 2 tbsp Milk

Streusel Topping

  • 0.25 cup All-purpose flour
  • 0.25 cup Granulated sugar
  • 2 tbsp Vegetable oil

Instructions

  • Step 1: Preheat your oven to 350°F (175°C).
  • Step 2: Line a standard muffin tin with paper liners or grease each cup.
  • Step 3: In a medium bowl, whisk together the dry ingredients.
  • Step 4: In a large bowl, mix together the wet ingredients until smooth.
  • Step 5: Fold the dry ingredients into the wet mixture until just combined.
  • Step 6: In a small bowl, mix the streusel topping ingredients until crumbly.
  • Step 7: Fill muffin cups about 2/3 full with batter.
  • Step 8: Sprinkle the streusel topping over each muffin.
  • Step 9: Bake for 18-20 minutes until golden brown.
  • Step 10: Cool in the tin for 5 minutes, then transfer to a wire rack.
