  • 1 sheet Puff pastry, thawed
  • 1 small wheel Brie cheese
  • 1 each Egg, beaten (for egg wash)
  • 2 cups Cranberries (fresh or frozen)
  • ½ cup Granulated sugar
  • 1 tablespoon Cornstarch
  • ¼ teaspoon Salt
  • 1 teaspoon Minced jalapeno

Instructions

  • Step 1: In a medium saucepan, combine cranberries, sugar, cornstarch, salt, and minced jalapeno.
  • Step 2: Cook over medium heat, stirring until sugar dissolves and cranberries break down, about 5-7 minutes. Remove from heat and let cool slightly.
  • Step 3: Preheat oven to 400°F (200°C). Roll out puff pastry on a lightly floured surface.
  • Step 4: Place brie in the center of the pastry and spoon cranberry mixture on top.
  • Step 5: Fold pastry around brie, sealing any openings, and place seam side down on a baking sheet lined with parchment paper.
  • Step 6: Brush with beaten egg for a golden color.
  • Step 7: Bake for 25-30 minutes until golden brown and flaky.
  • Step 8: Allow to cool for a few minutes before serving warm with crackers, bread, or apple slices.

Notes

Ensure puff pastry is completely thawed. For more spice, add extra jalapeno. Let brie rest before slicing to prevent excessive oozing.
