  • 16 pieces extra large shrimp, peeled and deveined
  • 6 slices thin slices of prosciutto, cut lengthwise into thirds
  • 2 tablespoons maple syrup
  • 1 tablespoon soy sauce
  • 1 teaspoon Dijon mustard
  • 1 cup couscous
  • 1 piece lemon, zested and juiced
  • 2 cups vegetable broth or water
  • Salt and pepper, to taste
  • Fresh parsley, chopped for garnish

Instructions

  • Step 1: Preheat your oven to 400°F (200°C). Pat the shrimp dry with paper towels.
  • Step 2: Wrap each shrimp with a piece of prosciutto, covering the body without obscuring the tail.
  • Step 3: In a small bowl, whisk together the maple syrup, soy sauce, and Dijon mustard.
  • Step 4: Place the wrapped shrimp on a baking sheet and brush with the marinade. Marinate for 15 minutes.
  • Step 5: In a medium saucepan, bring 2 cups of vegetable broth or water to a boil. Stir in the couscous, cover, and let sit for 5 minutes.
  • Step 6: Fluff the couscous with a fork, then add lemon zest and juice, seasoning with salt and pepper.
  • Step 7: Bake the shrimp for 12-15 minutes until opaque and prosciutto is crispy.
  • Step 8: Serve the shrimp on a bed of couscous, garnished with parsley.
