Instructions
Step 1: Gather and prepare all your ingredients, shredding the cheeses if necessary.
Step 2: In a mixing bowl, combine corn starch with a few tablespoons of evaporated milk and whisk until dissolved.
Step 3: In a medium saucepan, heat the remaining evaporated milk over medium-low heat without boiling.
Step 4: Stir in garlic powder, onion powder, and cayenne or hot sauce. Add jalapeños if using.
Step 5: Gradually add the shredded cheeses, stirring continuously until melted and gooey.
Step 6: Slowly add the corn starch mixture while stirring to thicken the sauce. Adjust consistency with more evaporated milk if needed.
Step 7: Taste and adjust salt as needed. Serve warm over chips or as a dip.
