Ingredients

  • 1 cup butter softened
  • 2/3 cup powdered sugar
  • 1 package instant pistachio pudding mix 3.4 ounce
  • 1 2/3 cups all-purpose flour
  • 1 1/2 teaspoons almond extract
  • 2 drops green food coloring optional
  • 1/2 cup maraschino cherries chopped finely

Instructions

  • Step 1: Preheat your oven to 350°F (175°C).
  • Step 2: In a large mixing bowl, combine the softened butter and powdered sugar. Beat until light and fluffy (about 2-3 minutes).
  • Step 3: Add the instant pistachio pudding mix and almond extract, mixing until well combined. Add green food coloring if using.
  • Step 4: Gradually add the all-purpose flour, mixing on low speed until just combined.
  • Step 5: Gently fold in the finely chopped maraschino cherries.
  • Step 6: Using a cookie scoop or spoon, portion out about 1 tablespoon of dough and roll into a ball. Place on a baking sheet lined with parchment paper.
  • Step 7: Bake for 12-15 minutes or until the edges are lightly golden.
