Ingredients

  • 2 cups fresh peaches chopped – Choose ripe, juicy peaches for the best flavor.
  • 2 cups fresh nectarines chopped – Make sure they’re ripe but firm to hold texture.
  • 4 cups granulated sugar – This helps with sweetness and preservation.
  • 1/2 cup lemon juice – Adds acidity for flavor and helps the jam set.
  • 1 packet fruit pectin – Essential for thickening the jam quickly.

Instructions

  • Start by washing your peaches and nectarines thoroughly. Remove the pits and chop the fruit into small, uniform pieces. This ensures even consistency in your jam and helps it set well.
  • In a large mixing bowl, combine the chopped peaches and nectarines with the granulated sugar. Stir well to coat all the fruit with sugar. Let this mixture sit for about 10 minutes. This maceration step draws out the natural juices, enhancing the flavor and making the fruit softer.
  • Pour in the lemon juice and sprinkle the fruit pectin over the fruit and sugar mixture. Stir vigorously for about 3 minutes. This is crucial because the pectin activates and begins to thicken the jam as it blends with the acidic lemon juice and sugar.
  • Let the jam sit at room temperature for 5 minutes. You’ll notice it starting to thicken as the pectin does its magic. Stir once more before transferring.
  • Spoon the jam into clean, airtight containers or jars, leaving some space at the top. Seal the containers tightly.
  • Place the jam in the refrigerator if you plan to consume it within 3 weeks. For longer storage, freeze the jam. This method preserves the fresh fruit flavor beautifully and means no canning is necessary.

Equipment

  • Large Mixing Bowl
  • Airtight Containers

Notes

  • Use ripe, juicy fruit for the best flavor and proper jam setting.
  • Stir thoroughly after adding pectin to avoid clumps and ensure even thickening.
  • Store jam in airtight containers and refrigerate or freeze to maintain freshness and quality.
  • Try adding fresh herbs or spices for a unique twist on the classic jam.
  • Reduce sugar cautiously if you prefer less sweetness, but it may affect the jam's set and shelf life.
