Ingredients

  • 1 cup rolled oats the heart of this recipe, providing fiber and sustained energy
  • 2 cups almond milk a smooth, nutty dairy alternative that soaks into the oats
  • 1 ripe peach diced, fresh and juicy for natural sweetness and vibrant flavor
  • 1 teaspoon fresh ginger grated, adds a refreshing, spicy kick
  • 2 tablespoons maple syrup a natural sweetener to balance the tartness of ginger and peach
  • 0.5 teaspoon vanilla extract for a subtle, warm aroma
  • 0.25 cup Greek yogurt adds creaminess and protein
  • 0.25 cup granola for a crunchy topping that contrasts the creamy oats
  • fresh mint leaves a fragrant garnish that brightens the parfait

Instructions

Step 1: Combine the Base Ingredients

  • In a medium-sized bowl or a mason jar, add 1 cup of rolled oats and 2 cups of almond milk. Stir in 2 tablespoons of maple syrup, 1/2 teaspoon of vanilla extract, and 1 teaspoon of freshly grated ginger. Mix everything together until well combined.

Step 2: Add Fresh Peach

  • Dice your ripe peach into small bite-sized pieces. Gently fold half of the diced peach into the oat mixture.

Step 3: Refrigerate Overnight

  • Cover the bowl or jar with a lid or plastic wrap and place it in the refrigerator. Let the oats soak overnight or for at least 6 hours.

Step 4: Assemble the Parfait

  • In the morning, give the oat mixture a good stir. In a glass or bowl, layer the oat mixture, followed by a spoonful of Greek yogurt, then more oats. Top with the remaining diced peaches and sprinkle 1/4 cup of granola on top for crunch.

Step 5: Garnish and Serve

  • Finish your Peach-Ginger Overnight Oats Parfait with a few fresh mint leaves for a pop of color and refreshing aroma. Enjoy immediately, or pack it for an on-the-go breakfast.

Equipment

  • Medium-sized bowl
  • Mason jar

Notes

  • Use rolled oats instead of instant oats to maintain texture and avoid mushiness.
  • Keep granola separate until serving to preserve its crunchiness.
  • Adjust the amount of fresh ginger to your taste to avoid overpowering the peach flavor.
  • For a vegan version, substitute Greek yogurt with coconut or almond-based yogurt.
  • Store leftovers in the refrigerator for up to 3 days; stir in almond milk if oats thicken too much.
