Ingredients

Potatoes

  • 4 medium red skin potatoes, chopped
  • 4 medium Yukon gold potatoes, chopped
  • 2 tablespoons olive oil
  • to taste salt and pepper Generous pinch
  • to drizzle truffle oil
  • cup parmesan cheese, grated Give or take, depending on your preference

Instructions

  • Step 1: Preheat your oven to 425°F (220°C).
  • Step 2: Wash and scrub the potatoes thoroughly. Chop them into even-sized pieces, about 1 to 1.5 inches.
  • Step 3: In a large mixing bowl, combine the chopped potatoes with the olive oil, salt, and pepper. Toss until evenly coated.
  • Step 4: Spread the potatoes in a single layer on a large baking sheet.
  • Step 5: Roast for 25-30 minutes, tossing halfway through for even browning.
  • Step 6: Once golden brown, sprinkle the grated parmesan over the hot potatoes and drizzle with truffle oil.
